14 oz. capellini pasta (angel hair)
8 medium tomatoes, cut into 1/2” pieces
11 fresh basil leaves, chopped
2 cloves garlic, chopped
6 tablespoons olive oil
salt and freshly ground pepper, to taste
grated Italian cheese for serving
- In large pot of salted boiling water, cook pasta until
al dente (to the bite); drain; do not rinse.
- Meanwhile, in large bowl, combine diced tomatoes,
chopped basil, garlic and oil; season to taste with
salt and pepper; whisk to combine.
- Add pasta to bowl and toss lightly to coat well.
Transfer to large sauté pan to heat through.
- Serve immediately. Sprinkle with grated Italian
cheese of choice.
